I would think any of the bog-garden plants would work. Perhaps even Hostas and small starts of them are relatively inexpensive. Ferns are good, Astilbe, Begonias, Coleus, and look at Japanese Forest grass too. If not for your deer problem you could even grow lettuces and other leafy greens there, things like the brightly colored chard, and celery.

The Astilbe might work, although it prefers a moist, sunny position. Watercress grows naturally in slow flowing water and needs sun and a lot of moisture. It is grown as a vegetable.

Asparagus sprengeri is not hardy in your zone so you'd need to bring it inside for the Winter. I don't know Uncinia but a quick Google tells me it is slow growing and not likely to be hardy in your zone either.

Can they go directly into the ground?

Just Google Coleus from seed. Many hits.

BTW 'Non GMO' is a nonsense in reference to Coleus seed. There are no GMO seeds at all available to home growers so it's a pointless claim and a cynical marketing ploy.
