I'm no dendrobium expert, but the ones at the top look to be keiki's and they might bear flowers in a couple years maybe? I'm not so sure how stem growths flower versus basal growths. As for care during growth for Den's and anything that has a rest, absolutely nothing when inactive, fertilize on a regular basis (weakly weekly) during growth until it's over with. It usually works with dens and cymb. You may have not put it out for dry rest soon enough so it gave you keiki's instead. :/

I have seven den nobles that I bought at the end of Dec from Hawaii and most of them have just now lost all their flowers. The first one to flower in early Jan had 18 canes so I divided it into three plants after it finished blooming in early Feb. It has many new canes coming up from the bottom of the plants. I also noticed in March a few small nubs starting to grow on one of the older canes. At first I though they were kiekis but they turned to be new flower buds. They will be blooming in a few days. I have all the den nobles outside now in full sun and I water them everyday. We are reaching the high 80's and low 90's now. I also fertilize once a week. The important thing with these dens is to stop fertilizing in Aug and cut watering in half so they will start to produce blooms when the temps drop.
