I would go with a light counter, such as off white quartz with an off-white porcelain subway tile in a running bond horizontal pattern. Put in a farmhouse type or at least a deep large new sink. Add LED under cabinet lighting on dimmers. I would extend the peninsula to include about 11-12 " for a seating counter. If you want some movement or some color in the counter/backsplash you can go with a light marble effect or you could add three rows of one inch glass multi-colored (very soft color) within the center horizontal line (avoid the light plug/switch area). Go with a light beige grout.

Go with simple whitewashed looking wooden barstools & if getting the table & chairs, match the chairs to the barstools. Use a gate leg or drop leaf table for the breakfast area. Hang two or three small low hanging hand blown glass light pendants over the counter.

Finally, take down the venetion blinds & add a gently swooping Roman shade in a color which will go with the pendants. If you are going to add color to the walls, be sure to remove the air vent covers that are high on the wall & paint them the same color as the walls & replace them.
