I did one room with tape/mud two years ago and it still is ok. As long as you don't plan to move the home, there shouldn't be a problem. If there is not too much texture, I think you can use a paint roller over the wet spackle to sort of match, or you can buy texture in a spray can. My walls were smooth, and some of the seams show. After the first room, I decided to use textured, paintable wallpaper, which is designed to cover wall damage. There is a lot of info on this on the web, just google it. Also, if you are on facebook, search for mobile home remodeling or decor pages. This forum doesn't get much traffic.

The expensive, time consuming fix is to replace the walls themselves with wallboard. People have done it, and the results are lovely.
