Granite offers natural beauty that is difficult to replicate. You will have to select the slab in person. You can't just rely on a sample piece because there can be so much variation, not only from slab to slab, but also within the same slab. It is porous, even when "sealed". It is susceptible to thermal fracturing if you place a hot pan or pot on it. And it is generally more fragile. Granite is generally a better choice for traditional style kitchens.

Engineered Quartz tops offer strength, durability, and consistency. There are newer choices that attempt to mimic the natural variation of marble or granite. It doesn't need to be sealed and generally doesn't stain. It is more scratch resistant. Quartz is generally suited more for contemporary or modern style kitchens.

Final note: Whether you choose granite or engineered Quartz, never cut on them. That's what cutting boards are for. Never place a hot pot or pan on them without placing a cloth between the pan and the top. Yes, you may get away with not doing that, but why take the risk with counter tops that cost thousands of dollars. Better safe than sorry.
