A chimney hood is difficult with a ceiling height that low, but check out the photo below to see if that type of placement might work. Alternatively, you might think about a range hood that is built-in to cabinetry instead.

that is exactly what I want--what brand are those hoods? we don't want to do cabinetry for a few reasons (window to right of stove, expense).

I'm guessing that it is possible to cut down some brands of hoods below their "minimum height" but I can't figure out how I determine that in advance.

bethm5, I found this photo on Houzz, so perhaps you can look for it to see if the resources are listed? If not, take this picture to an appliance dealer to see if they can find a similar model. Best Range Hoods come in a variety of different chimney styles; you could check out their website. P.S. This is not the type of purchase I would do online; work with a dealer and a professional installer.
