Need help IDing and offset question

I got these beautiful succulent plants from a man in our local market, a real find I thought and they seem to be thriving, I've broken up some chicks that were bigger into other pots, then them and the mothers have grown and all are sprouting offsets! They are high up Tho not low in the soil? Do I still wait for the stem to either before replanting the chick? There's so many! And more appear each day!

I have no idea why the pictures are the wrong way around, they aren't on my phone :s any info greatly appreciated, I'm a new fanatic to succulents and ive just ordered some beautiful ones to add to these :) thanks :)
