Got my tomato and pepper starts too early.

I got my hands on some inexpensive (but really nice looking) tomato and pepper starts. It's only April 21st and I usually don't put the tomato or pepper starts in the ground until mid-May. I'm in SE MN. So, what should I do with them? Keep them under a grow light for 2-3 weeks? Start hardening them off and then put them in the ground with some sort of plant cover?
