To be honest, your question is near impossible to answer with any accuracy. There are just too many variables with the actual variety and weather being biggest ones. They'll ripen when they ripen.

That's what I was afraid of. I can, however, answer those two things if it'll help. They are plain ol' orange habs, and the high/low average for this time of year is about 88/65F. They are being watered pretty much daily, either by hose or by mother nature.

just do not kill them with kindness. they don't like wet feet. so you may not need to hose 'em down all the time.

Can you try to let the soil dry? "Stressing" these plants is quite necessary...also you may consider adding Epsom Salt, Fish Emulsion and a Compost Tea or equivalent. Oppose the Epsom Salt treatment with the Emulsion and Compost Tea out to every other week or so. You should see rapid improvement.
