My soils pretty healthy. I just have had shaping issues with carrots. I thought maybe some of this moss in the soil for the carrots might help? I don't want to add much more compost as the soil is already in surplus. I guess I wanted to know if the found moss will acidify the soil like peat moss can?

Carrots and other root crops want a very finely textured soil - a sandy loam is ideal. And the depth is important - a good 10-12 inches is best. I doubt the moss will provide any attributes that will improve the soil texture the way coarse sand would. And no, regular moss will not have any significant impact on soil pH.
