Kitchen Lighting Layout

Need help with laying out lighting in my kitchen. Although the room dimension is pretty standard my layout is kind of unique/odd. Currently there is just a large light box which contains three four foot florescent fixtures in the center of the room along with a single recessed can over the sink. Overall dimension of the kitchen is 10'x15' and is open to a breakfast area of approximately 10x10. Wall of three windows at breakfast area along with window over the sink is the natural light to the room. Ceiling height is 9'.

I would prefer to go to all recessed lighting and if possible would like to possibly mount a ceiling fan (without a light kit) somewhere as living in the deep south cooking in the summer can get stuffy in the kitchen even with the AC running and the house being a comfortable temperature. Thinking of using 6" LED which are 3000k 861 lumens each. I prefer LOTS of light and will put the recessed on dimmer if I need to tone it down some. I'm a function over form person.

There is a 12" raised bar separating the kitchen counter from the dining area. No want of pendant lights over the bar. The ceiling just above that bar has an exposed beam in the ceiling. Cook top on the island has a downdraft vent. There is a cased opening to dining the dining room on the angled wall.

Attached drawing is to scale. Sorry for the hand drawing but I like to physically lay things out on graph paper when I first start projects. Photos are old as there are no longer any valance or blinds on the windows but it gives you an idea of the room.

Thanks in advance.
