Any kind of prepared seed starting mix is fine. I'm not sure I'd have concerns about it being "organic".........unless it has added fertilizers (which seeds don't need), soil mixes are going to be organic - that is, derived from naturally occurring sources.

Is using the seed starting mix okay even if the seed has germinated? What about it being transplanted in my garden after a time, is it still being in the seed starting mix going to hinder its growth?

No worries - get the seeds started and growing and when they have their second set of true leaves, go ahead and plant.

That can work OK. Just remember peat is good for sprouting and weak for growth.

I'm planning to transplant the seed (once it germinates in the bag) into the 5:1 (or should I use the 5:1:1 mix or Miracle Gro) so that it sprouts, and once it's two inches or so, I'm planning to put the entire pot (which is made out of newspaper) into my garden. Commercial seed starting mixes are going to be made of organic matter, Peat Moss, finely ground bark, Coir, or a mixture of those. Since seeds have everything they need to germinate (except moisture) and grow there is no need for a nutrient source in a seed starting mix. Once those seedlings have developed the true leaves then some nutrient source may be needed but usually at half the recommended strength.

For seed starting any inexpensive brand of starter mix is fine and the really expensive nationally advertised brand is simply a waste of your money often at 3 times the cost, and it has the unnecessary synthetic plant food mixed in so is not a good choice for an organic grower anyway. A good seed starting mix should already have either perlite or vermiculite mixed in.
