What is used for the upper part of wall? Is that sheetrock with textured paint or plywood?

The upper walls are heavily textured plaster. They were original to the home.

I have similar walls in my master bathroom now, painted in a horrible dark blue/gray color. How could I paint over this kind of texture?

A roller with a heavy nap is best for getting in between all the little nooks and crannies, I have found. Hope that helps!
