Kitchen with 8 foot ceilings

Hi, we are looking to put in ikea cabinets and have the choice of 30 or 40 inch cabinets for the uppers. I'd rather not have a gap between the ceiling and ideally room for some crown moulding. I'm wondering what would be the better choice and what the minimum clearance between the work surface and upper cabinets is. Is 16inches too little?

In my situation, I am happy that I have 18 in. between the counter and the upper cabinet mostly because I clear the upper cabinet when I lift the handle of my coffee maker to insert the cup. With only 16 in., I would need to move the coffee maker forward to be able to lift the handle completely. This is a little detail but it would bother me to move the coffee maker back and forth each time I want a coffee. I just mentioned it in case you think this could bother you too. There might be other appliances that require vertical space.
