Watering Question

Hey everyone! I know it's recommended to water after the first inch of soil goes dry but I am concerned that even going by that rule I am still over watering our Gardenia Tree. I'm keeping it out of direct sunlight and so far it's taking about a week before the first inch is dry. I watered it last Saturday and more of the leaves have turned yellow so I pulled them off. I got to thinking and it seems just because the first inch of the top soil is dry wouldn't necessarily mean that it needed watering. Wouldn't the soil on down in the pot still be quite moist? Just a thought I had. I think what I might be doing wrong is just drowning it in water until it starts coming out of the drain holes at the bottom of the pot. Maybe I should water it, wait a minute or two, and water it again and continue this process until it starts draining? I'm open to suggestions at this point lol
