Dining room redo

Looking for suggestions. We have an 1872 Victorian. Diningroom is in the process of refurbishing. Ceilings are 11 foot, have beautiful woodwork throughout room and around windows. Wondering about a wainscotting to install or not. Any thoughts? Also wallcovering. I love Gracie, but the room has way to many doors and windows. Any thoughts or ideas appreciated. Thank you.
