I wouldn't remove the dishwasher or the microwave. How nice it is to be able to use the dishwasher for your drink glasses and hors de ourve plates without having to take them upstairs. The microwave will be great for warming up those hot toddies or coffee too. Instead of a wine frig, how about one of those under cabinet refrigerators where the stove is? Removing the cabinet doors on the top so you can display your bottles and glassware will make it look more "bar like" too. A smaller undermount stainless sink will look less "kitcheny" too. How fun you have this space to gather.

Cannot tell how the rest of the pace looks like, but I would eliminate the peninsula and L shape left wall of cabinets. I would just keep a straight line of cabinets on the back wall with a small stainless steel sink, dishwasher, microwave and a small refrigerator. If budget allows, wine cooler units are always a great fit.
