what takes over weeds in tree heavy area?

We just built a new house, with the view of our back yard going to be grass for 20'; Then there is a strip of mature trees about 30' deep, then prarie area. The area under the trees grows weeds 8' tall and I would like to find something else that would not grow as tall so I can see the kids playing on the other side and have a nice view through the summer. There will be footpaths, so trampling is not an issue. I have no intention of gardening/mulching/maintaining/edging it beyond what is needed to get new plants established. It would be perfect if there was something that would take over the weeds, but not the trees- on its own and stay less than3' tall. I dont want any vines that will climb and choke out the trees. Located in zone 5b. The house side is sandy soil, the prairie side is peat. Any ideas? Thanks in advance!
