saving begonia tubers- some sprouting now

I am drying out my begonia tubers and as I just looked a few over I could see several with little red dots like tiny sprouts. So does this mean they are sprouting now and will die and not sprout in the spring? Is there anything I should do. They are drying in front of a register in a shallow box on the floor in my kitchen. They are dry now so if I quickly put them in sacks of peat and move them to a cool place, will that take care of any problem?
