When you say you have to "rip it out a lot," I take it that you are pulling the needle out, unraveling the yarn and then picking up the stitches with an empty needle. I think that's harder on the yarn than "unknitting" (tinking) it. If the pattern is difficult, perhaps you should knit slower and check your work more often so if you find an error you can unknit.

The only times I have had problems with yarn splitting have been with cheap yarn.
