How cold has it been where you are? I've got a 3 foot planted Pygmy Date and 4 that are 8" tall and in small nursery pots. I planted the large one this summer so this is my first attempt at trying to overwinter it in zone 8b Alabama. Luckily we've only had two light freezes so far. My method was to put a portable greenhouse over it and I'm using a small heater on cold nights. Each morning I've just been misting it with a hose for a few minutes and it's very green besides a little curling on the ends of the fronds. I also put 2 slow release fertilizer sticks in the ground in early November. Have you fertilized yours? I would also place them in direct sunlight if you can and see if that helps. I'm definently not an expert and still trying to get mine to look healthier but hopefully I can be of some help.

I Am in zone9 and we have had light freezes for 7 of the last 15 nights so that's a concern and unfortunately directs sun would not be possible as the pots weigh 300+ pounds with palm, soil, ect. I didn't think it was a great idea planting palms in December, in Phoenix AZ, anyhow but thought it might be an worse idea to fertilize them at this time of year but am really unsure if fertilizer would be so bad. I though maybe wilting fronds would be a tell tail sign of the one of many things it could be that we've covered. All your suggestions and thought have been mine as well.
