I used to use a chile rellano recipe from Sunset and cannot find it. Here is how I remember making 2 or 3 (?) for husband since I wasn't a fan.

2 canned Ortega California chiles
2 long narrow pieces of Monterey Jack cheese to fit inside chile
2 eggs, separated
1-2 tsp. flour (? amount)
pinch salt
oil for frying
~ 2 T. flour on a bread and butter plate

Set stuffed chiles onto floured plate..
Let an inch of oil heat up in cast iron or heavy skillet.
Whip egg whites until stiff.
With fork beat yolks with flour & salt. It should be a little thicker and smooth.
Fold some of beaten whites into yolks to loosen.
Fold in remainder of beaten whites.
When the oil is hot, working quickly, spoon a length of batter into the oil,
turn filled chile over on the plate to flour other side & lay it onto the length of batter, spoon more batter over it to cover.
Fry until bottom has browned; turn.
Serve immediately with red salsa. (I drained on paper towel.)

Got a much better rellano by spooning the batter onto the hot oil altho the recipe said to dip the filled & floured chile into the batter. Eeiks, what a mess. Sorry I don't remember how many rellanos 2 eggs make.

I misplaced a Sunset recipe from years and years ago, and Sunset found it for me. Keep trying.
