So many irises!

My husband and I moved to his old family farm a couple years ago. The last person to live in it was his great aunt, and boy did she love irises! We're in the ozarks so it's pretty rocky but there's a giant, beautiful, fenced in garden plot next to the house (it has been the garden for almost 100 years). The only problem is it is covered with irises, everywhere. Don't get me wrong, they are beautiful and I really do love them- just not scattered all over my garden. We have at least 19 different colors and they are the old world ones. So here's my question: can I please dig them up this spring?Before they bloom? We are going to transplant them as we did them up but I really want to get them out of there. So give me some advice please, I know nothing about them. Thank you thank you!!!
