Hi, now I see your plan I would go with 2 sinks on the one side and make the former sink into a linen closet where you can store your towels and other items - extra shampoo, toilet paper etc.

Can I make a couple of other suggestions:

If possible, put pocket doors on the closets, will make it much easier to use the space. The area to the right of the "small" sink in the closet, can you make that into shelving. I find shelves much much practical, you can fold tees and sweats and place them on the shelves.

If the "two sink" cabinet is custom. Have them make a drawer at the bottom of the cabinet with 2 smaller doors above it. I hate having that big space under the sink and can't find anything. Having a drawer really helps, and the stuff in the cupboard is place higher for easier access. Hope this makes sense.
