KAW ... Calzone ...

... or Use What You Have On Hand Calzone.

I made calzone a couple of nights ago, using my pizza dough recipe that I've been using since the 1970s (Joy Of Cooking). For the fillings, I checked out a few recipes on the 'net, then came up with my own. This is one and one-half recipes of the dough, ready for rising:

While the dough was rising, I 'sweated' the fillings and sauce, to reduce the moisture content. Ham, pepperoni, and mushrooms:

Next, onions and peppers. I have problems with onions and peppers, but my kids love them, so I separate the fillings.

Reducing the sauce:

I forgot to take a picture of the risen dough, but here are 3 of the quarter pieces, waiting to be rolled out.

Ready to assemble, including the cheese mixture--cream cheese, grated parmesan, dried garlic granules, fresh ground pepper, and dried basil.

Plus shredded mozzarella:

One of each, ready for a 450° oven. I've been using those baking pans since the '70s, too. :)

Cooling for a few minutes:

I had enough scraps to make a thin-crust cheese pizza:

I'm out of space--I'll add a pic of the plate in the next post.

With a little extra tomato sauce:

We had some of the leftovers last night, with a big green salad, and when I got up this morning I discovered that every last piece had disappeared--probably in someone's lunch bag. :)

Thank you leela4. It's getting close to supper time here, so I'm hungry, too.

I had planned to do this KAW thread, then earlier I saw an update thread by trailrunner on the Home Dec Conversation forum. She used to post the most wonderful pics of bread and pasta--so, trail, this thread is for you. Anyone who remembers her, might want to pop in to say 'Hi.'

MG, that looks sooooo yummy! I want to try that dough recipe. I just googled joy of cooking pizza dough. Is it the same recipe as in this link?http://www.thejoykitchen.com/recipe/white-pizza-fresh-tomatoes-feta-and-basil

Thank you, rebunky. The recipe in the link you posted is a long-rising version, started the day ahead, so it uses less yeast. I make the shorter rising crust, which calls for 1 1/3 cups water and 1 cake (scant TBS granulated) yeast. The oil and salt are the same, but my recipe calls for 4 cups of flour, plus some for the kneading step. I substitute at least a cup of whole wheat flour.

And in addition to the granulated garlic and dried basil, and cream cheese instead of ricotta, I used canned tomato sauce--maybe not authentic, but it sure was good.

How delicious! Your calzones and pizza look very professional. Lucky kids! I make pizza but never think to make calzone. You have given me an idea as usual. Yummy filling.

Have you ever used ricotta cheese instead of cream cheese?

BYW, the long lost cousins of your pans are living in my house. Also from the 70's.

Yum! Of all the gluten laden, nightshade filled dishes I can no longer eat, I miss pizza the most...

Ack, I had a big dinner, yet you just made me so hungry! Looks amazing!

    Yummy!

happy2b...gw, thank you. The recipes all called for ricotta, but I had some cream cheese I wanted to use. I prefer the consistency of cream cheese--I soften it in the MW and add a little milk to make it spreadable. I've read that store-bought ricotta doesn't compare to homemade, so maybe one day I'll try making my own.

eam44, yep, tomatoes and peppers in the same gluten bomb. One of my best friends just started an elimination diet, so I'm not telling her what we've had for dinner lately.

fouramblues, thank you--tonight was a much simpler ham and cheese omelet, and the left over salad.

    Errant_gw, thank you!

Yes i have the rest of the family of those pans from the 70's !! And your CI skillet would be perfect for the deep dish pizza :) !! Great pics and thanks again for suggesting KAW....they are always fun and informative. c

The original hot-pocket! Love them. You can make them meatless, too, for those so inclined. I'll take mine w/ chunks of pepperoni and slices of cappi.

Thank you for showing your much-used baking pans. Mine are from the 80's and look just like that. Now I don't feel guilty about it. :)

I make pizza now and then but never thought of doing calzones.

My mom (who would be 98 this year) so loved her falling-apart Joy of Cooking circa 1960 vs the newer versions, that one of my brothers took it in and had it re-bound for her. It was a great present.

There is a recipe for Coconut Milk Cake in there that is to die for.

    romy718, thank you--enjoy your pizza. :)

Thanks, trailrunner, happy to see you back on GW. I wish more folks would post KAW threads--it's nice to compare recipes and methods.

mgmum, thank you. It's nice to surprise the kids with something different.

Casey, my favorite is pepperoni and mushroom, but the kids always want a plain cheese pizza in the mix. Before my grandson learned to appreciate tomato sauce, he would make his pizza black and white--mozzarella, onions, and ripe olives.

    Thank you, omelet. :)

funkycamper, it's good to hear that other cooks have old favorites that look the same as mine. Now we want to see a KAW from you, when salmon is in season again.

suzanne_sl, my copy was a wedding gift in 1978. Until I found the internet, it was my main source for any question about cooking. Now I mostly use it for favorite recipes--one of the red ribbons marks the pizza dough page.

Oh man I am feeling so insufficient in my GW kitchen with all these awesome KAW threads and I am starving! That looks so good mama! Happy to see trailrunner back too. :-)

Wonderful idea. Thank you. RE JOC - we received one as a wedding gift years (and years, and more years) ago. It is one of the few gifts that remain in our possession and has a prominent place of display and gets frequent use.

nightowl, I just commented on the reveal thread for your gorgeous and stunning kitchen! My JOC is now covered in green checked paper, to keep it looking good for the next generation.
