Tried & True Eggless Cake

A girl on one of my teams has a birthday next week and was lamenting that she couldn't have a birthday cake because they are made with eggs.. she's honoring a hindu tradition (not sure which) and is not eating meat or eggs until early April. She's a sweet girl and is far away from most of her family. I'd love to make (or buy) a cake for her birthday .. but I am not going to go eggless unless someone has a much loved tried and true recipe. I'd rather take pastry or something else indulgent and eggless than take a chance on something lackluster.

Any ideas?

My DD was initially allergic to eggs as a toddler and I used 1 tbs flax seed in 3tbs warm water, let stand for three minutes, stir and add in place of one egg. I made all cakes and cookies substituting this mixture for each egg and never noticed a difference in my baked goods. I even made French toast with this substitute, admittingly the French toast was not the same like the cakes were but still tasty.

here is a great article explaining the science behind the substitution.

I have made cakes similar to the ones that shee has posted and it is very good. Another wonderful option would be a chocolate pudding cake, where there is a layer of liquid/chocolatey goodness at the bottom. Such a cake calls out for ice cream, of course.

I'm so happy that this came up! I had a recipe like this years ago and it made the best cake! But I lost it and have never found another one similar. Thanks so much!

I used the recipe below to make a triple tier wedding cake for friends. It turned out great.

Another substitute for eggs is aquafaba - it's the liquid from canned chickpeas. You can apparently even beat it into a meringue. I haven't tried it yet but there's a facebook group with lots of recipes and you can google it. Maybe more info than you'd want!

    BRYANNA'S MOIST VEGAN LEMON
    CAKE

Makes two 9" round or 8” square
    layers (5 c. batter)

    2 1/2 c. plus 2 T. white pastry or
    cake flour

    1 1/2 c. granulated organic light
    sugar

    2 tsp. baking
    powder

    1/2 tsp. baking
    soda

    3/4 tsp.
    salt

    1/4 c. + 2 T. vegan butter

    2 T. lemon
    juice

    1 c.
    water

grated zest of 1 large organic
    lemon

    3/4 c. non-dairy
    milk

    1 1/2 tsp.
    vanilla

    1 tsp. pure lemon
    extract

NOTE: Use shiny pans so that the
    layers don't brown excessively..

    Preheat oven to 350 degrees
    F.

Prepare the pans by greasing with
“Cake release”/Pan Coating (see below for recipe), and lining with baking
parchment cut to fit the bottoms of the
    pans.

    Mix the dry ingredients together
with a whisk in a large mixing bowl. Add the vegan butter, water, and the juice
and beat with an electric mixer for a minute. Add the remaining ingredients and
beat one more minute. (NOTE: the batter
is runnier than the average cake batter-- don't worry!)
    Divide the
batter equally between the cake pans.

Bake 25 minutes, or until cakes
    test done.

Cool on racks for 10 minutes, then
loosen cakes and remove from pans to finish cooling.

    Thank you!

Shee, that cake sounds perfect.. is there any special frosting you use? I guess I need to find out if she's full on vegan for this observance or if it was just meat and eggs. Butter cream or cream cheese icing is what I'd go for.. but neither is vegan.

Roarah.. how interesting! I will read the article for the science on it.. I am into that.

Not a great work environment for ice cream, Tish.. but they sound lovely too.

I am a sucker for lemon, Neverbdone.... but my coworker is a chocolate lover. I'll keep that one in my back pocket for another time.

The liquid from canned chickpeas?!! Coincidentally I've been making my own hummus lately, using dry chickpeas (soaked/cooked) instead. The cooking liquid looks very rich indeed. I wonder if it would also work. BTW, chickpeas put most other beans to shame, so flavorful and such a cute shape.

I have the recipe Shee posted. I got it from my Grandmother. She got it in the late 30's, when eggs were sometimes hard to get and the farm wives came up with all kinds of substitutes. It is called Wacky Cake due to the lack of eggs and use of soda and vinegar for rising. It is by far our family's favorite 9x13 cake. It is a very heavy moist cake and doesn't work as well as a layer cake. Any chocolate frosting works fine, and you can make buttercream without butter, just use a little butter flavored crisco in place of butter.

Shee, i've 'known' that particular chocolate cake as a Funny Cake or a Dump Cake for the last 45 years. Have you ever heard it called either name?

I know it as Wacky Cake.

Funky - I truly like it with any homemade frosting! I usually make it with a buttercream. I even like it plain.

Patty & Carol - I've never heard it called any of those. I might be the odd ball. :)

Linelle, from what I've read you can use the liquid from home cooked chickpeas. Just make sure the thickness is the same as real egg-whites. So reduce if too watery.

My fave topping for chocolate cake is sweetened whipped cream & strawberries - or just the cream w/ maybe a garnish of shaved chocolate.

Shee (or anyone), I am making a chocolate cake with my class tomorrow and would love to use that recipe. Can you tell me what size/shape pan(s) you use?

We read a book called Thunder Cake and usually make it using the recipe at the back of the book, but honestly, it is never any good. This looks like it would be easier to do in class with a bunch of 6 year olds and sounds like it will taste better, too.

I also have one student allergic to eggs this year, so it gives me an excuse not to use the yucky recipe.

    Daisy I use a 9x13 pan.

Wanted to note the original recipe has salt in it. I accidentally copied it down wrong and my paper has something ridiculous like 6 T. I think it's 1/2 or 1 tsp. Maybe someone else can chime in. I just make it without and tastes the same to me.

Hi sheeisback, thanks so much for that. I did look online for another version to see pan size and cooking time and noticed the salt. Also, the other recipes called for 2 cups of water rather than 3. I thought I'd start with two and see what the batter looked like.

Oh I'm embarrassed! I'm so sorry. It is 2 cups of water. I think when I typed Third I just carried the 3 to the ingredient part. I edited it in the recipe above. Hope I didn't mess up anyone's cake!

no worries here, Sheeisback. The cake was great. Kids loved making it - and eating it. We added chopped strawberries and it was very yummy.

Since I posted this, I caught the flu.. not sure I feel good about baking for others (even though I HOPE to be better next week). A local bakery will make an eggless cake but I need to order it by today (for Wed).

How would you feel about someone who was recently sick baking a cake for the office?

it wouldn't bother me if the person who had been sick is feeling better!

to answer an earlier question, i always like a good ganache on chocolate cake- yummy and rich and not too sweet! and satifying enough that just a small amount is perfect, for those who might be watching their diets!

And this was the frosting that went with the 'funny cake'. I didn't use butter, but a full cup of Crisco. It may sound horrific, but is very similar to whipped cream frosting. It does need to be whipped with a mixer for almost a full 5 minutes, but thanks to the electric mixer it's not too difficult.

Patty growing up my mom typically used a cooked icing recipe on this cake with all Crisco. I'm not sure if it was this same one, but it was very good.

After this cake talk I ended up making a 1/2 batch of cupcakes this past week. Yum.

Hope you're feeling better Funkyart. I am still getting over the flu then developed bronchitis from 4 weeks ago. Still have a cough. I had out of town company during that time and chose not to cook at all at home. I just hated the thought of hacking around the kitchen and then having others eat that food. So we went out to eat and my DH cooked breakfasts. (Love him!)

My DD had a 24hr severe stomach bug most probably from food brought into her job for a potluck. So normally I wouldn't mind as much but since the recent illnesses, I am re thinking. If you feel up to baking then get a mask, really, and wash your hands, wash your hands, wash your hands, then you should be OK.

I use this one EVERY time I need a chocolate cake: http://allrecipes.com/recipe/16779/vegan-chocolate-cake

I'm very picky about cake, because I went to culinary school for pastry/dessert. This one is delicious!!

Thank you, Missy-- I am finally feeling a little better and planning to return to work tomorrow. I ended up ordering a cake.. since I haven't done anything that required more effort than boiling water since Thurs, it was really my only choice.

I appreciate all the recommendations and recipes. I don't often have a need for an eggless cake but it sounds like some of these are awesome on their own merits.

daisychain01, we just read Thunder Cake! To everybody else--I totally recommend it. It's a book relating a childhood memory of how a little girl's Old World grandmother taught her how not to be afraid of thunder. Truly charming. We were planning to make Thunder Cake, but now I know that the recipe at the back of the book isn't that great, I'll try one of the versions here.

I have to tell you how horrible the bakery eggless cake was. I didn't taste it.. I am still not eating and I don't like chocolate.. but as soon as she cut the first slice, I saw that it was going to be disgusting. It was dry, dense and the chocolate wasn't evenly distributed. I paid over $60 for this cake and it was an abomination.

There was no way I could have made the cake.. i struggled to find the energy to just carry the cake up the elevator. I have been THAT sick. But never again. I am even more grateful for your generous shared recipes.. just wish I had been up to using one.

Just had to pop in to see how you are feeling! I'm glad that you are recovering, I was concerned for you.

How was your goody box from Chanel? I loved everything except for the blush. I think they got the color confused because it's peach and doesn't look good with my coloring. DD and I are taking a trip to PC the day after Easter so I'm taking it along to exchange.

How sweet of you, Holly-Kay! I am starting to get back to normal.. today is day 8 so it's about time! I haven't been that sick in a very long time. It was the kind of sick where even the hair on my arms hurt. Yikes!

Yesterday was the first I was back to work since last Thursday and I honestly had zero interest in makeup. I did wear one of my new blushes today and it seems to work quite well (i got a powdered blush). Jury is still out on the other items as I just wasn't up to putting on eyeliner, etc. Some of my purchases were just stocking up on my normal products so, of course, they will all be fine.

I'd like to hear about your shoes! I so desperately need new spring/summer shoes but haven't been motivated to shop for them!

Earlier this year I had a flu like that. I seldom get ill and that flu hung around for almost two weeks. I felt like I'd die if I had to move. Worst flu bug I've ever had.

I am so boring. I bought three pairs of Michael Kors flats in luggage, navy, and coral. My CK's are black patent sling back with a heel that is maybe two inches. I really like them and they are comfortable for heels.

There should be a ten step program for shoe-abolish because I can never buy just one pair and when I find a style that I like and it's available in a variety of colors I buy more than one color. There was also a really pretty pair of MK heels in a blue floral. I don't own a pair of jeans but if I find a pair I like those heels are coming to live with me.

Funkyart, I am so sorry to hear the cake was bad. How disappointing. I'm glad you are on the mend. The flu has gone through our school and knocked several people out. Knock on wood, I've been taking the olive leaf (so sorry, I can never remember who on this forum told me about it, but I really am grateful!) and have avoided it so far.

Renovator girl, I still threw in some tomatoes just because some of the kids said "yuck!" as we were reading it (they should know better!). Are you a teacher? I put on a headscarf and pretended to be Babushka as we made the cake - totally embarrassing when the other teachers walked by. Hope your kids enjoy it as much as mine did.
