Carrot and beet seed saving

Hey guys so I live in Edmonton alberta Canada as most you may know the temperature drops to well below -20 and more likely -30celcius in winter time here this year I was hoping to seed my carrots and beets and was wondering A) is there a way to seed them early that is trick them into thinking it's been a 1 year cycle by say tossing in the fridge early ?


And B will either roots survive the winter ? And if not what can I do ? Do I pull them or dig them and place them in the fridge over the winter ? Will they keep that long ?

Just looking for some tips as I would really like to start learning a bit more about gardening and frankly growing for not only food but my own seed stock as well :)
