The earlier you dig them and water them, the less wilted they'll be by Saturday. Digging them tomorrow and potting them up, for example, would give them time to bounce back a little from being dug so they'll look a little happier by Saturday.

You're welcome, Sorie. I expect they will survive. Often, freshly dug plants will wilt a great deal from the shock of being dug, but they will rebound. I noticed yesterday that the tansy I dug immediately went into a tremendous wilt. I'll look at it today and I expect it will look better.

If something wilts too much after I dig it and hasn't recovered 24 hours later, I often take my scissors or pruning shears and cut it back 40-50%. That helps the disturbed root system recover because it is not having to support as large of a plant while recovering from being dug. You can prune you plants yourself before you bring them, or you can leave them for the recipient to prune after they replant them.
