Leafy Greens / Leggy and Floppy.

Hi, I was hoping for some advice on a few different veggies I have planted that seem to be heading in a bad direction.

I planted lettuce, kale and spinach from seeds outdoors. Everything seemed great and they all sprouted. Once they got the first set of true leaves, they became limp, fall over flat, leggy and just don't seem to be doing so well. I was wondering if by the looks of the images you have any advice for me. If I should start over or wait for them to get stronger roots. I know someone mentioned their beets did this at first and once their roots were stronger they became more upright, I just feel like they look so.... limp and hopeless! They are getting a nice 6 hours of good sunshine which I thought was fine for leafy greens. And like I said, they seemed to be just fine until those first sets of true leaves came in.
