Need tile for backsplash advice...

I am throwing caution to the wind and getting honed Carrera marble tile for my backsplash. We're just going to seal the heck out of it and cross our fingers.

After much trial and error, I found tile online. 1 sq ft of it arrived today and I was impressed with the evenness of color. It needs to be white with just a bit of very subtle gray, as all my backslashes are a bit choppy.

You may remember I have that 1948 O'Keefe & Merritt range with the tall backslash on it, so there is not a big space between the top of it and the huge stainless Ventahood. Next to that will be countertop to ceiling tile 24" wide (ceiling is only 8ft), and much of this will be covered by a pot rack with the pots hanging down. Next to that is a 36" cabinet with just the 18" typical backsplash. On the next wall, there is about 42" of under cabinet backsplash between refrig and corner, and the abutting wall has about a 6 ft run of backsplash. I haven't decided if I'm going to do tile on the short wall under the small cabinet at right angle to the sink and bay window, or the 10" wall on the other side of the bay - probably will.

The tile is available in 3x12 and 4x12 tiles. I like the 12" length instead of reg subway size - less busy and a bit "newer".

So...which size tile and do I do it in the classic brick pattern or stack it? I'm leaning towards brick pattern.
