Are you looking for another herb to replace the taste of sage, OR, are you wanting a similar taste? If different taste, try Thyme or Oregano.

To marinate what? There are some herbs that pair with things better than others.

In a recipe for a marinade, leaving out the sage won't make much of a difference. Try it without and next time, use the sage and see which you prefer.
