I did a little searching, and it seems that if kept in a warm, dry place, they can continue to develop color. I tried to delete the post, but cannot.

I did it with the sugar pumpkins one year. Worked fined. They were just starting to break color. I had to due to thieves. They didn't last as long but they did fine and stayed around way past the holidays. Took about a month for them to fully turn orange.

Will they turn orange 🍊 after I pick them while still green I've got kids aren't leaving them alone

Kids that live in the trailer court I live in won't leave them alone
