I'll bet dollars to donuts somebody on here breads it first, and oven blanches or something...maybe Dawn? I don't care for plain frozen squash, thawed and fried myself. I know some folks will bread the squash first, freeze it on cookie sheets, and then bag it, but I don't like it that way, either. With okra, you can bread and oven-blanch, as Dawn does, and then freeze it on cookie sheets before putting it into freezer bags. I've done okra that way, and you cannot tell that it isn't fresh from the garden fried. It's delicious. Dawn will hopefully come along soon and answer it, or possibly someone else who freezes squash for frying. I use my water-blanched (for 3 minutes), drained and frozen squash for squash casseroles, etc., because it's pretty soupy/watery once it thaws.

I water blanch it and freeze it too, specifically for use in squash casserole because I love squash casserole. We don't fry much of anything any more, except bacon and okra.

One year I froze tons of yellow squash and when I went to fry it, it turned to mush and left a ring where the skin was. I was so disappointed. The neighbor brought over some that she pickled and it was pretty good. I am wondering if they would hold together if you breaded them, froze them then tried to fry them frozen. Maybe the breading would hold the "insides" together.

I wondered if you could cook them and freeze them, then just warm them in the oven to crisp them up. Is there still to much water in them? I'm not a fan of yellow squash, so I don't have any experience.

Water expands when it freezes, which causes the cells to basically explode. That's what causes the mushiness. I wonder, if you dehydrated them, could you rehydrate like you do with tomatoes? They'd still be chewy, but maybe it'd work for a casserole or something.

This may sound weird but isn't there a way of getting some water out of cucumbers before making pickles. Like soaking them in salt water. Would that work somewhat for squash ???????

Thanks everyone for your suggestions/thoughts. I guess he'll just enjoy his fried squash for a few weeks in the summer and then wait until next summer. I'm trying to cut back on fried foods as well, so it's just as well.

Zucchini bread! I love to freeze baggies of grated. Didn't know anyone froze them in such a manner. I should try some this year.
