I disagree - if you have a sample of Uba Tuba Granite, there is a translucent gray undertone that is quite lovely. I'd try General Paint CL3244 Turbo or CL3244W Womb grays - and, as far as what to paint where - I can't tell from your photos because changing paint tones is tricky - I don't like to paint just one wall, I like the paint to help direct you from one part of the house to the other. so I would need to either see the actual house or see floor plans to help you decide if your going to change colours.
Try swatches of the General Paint - match them to the gray undertone in your granite - I'd try to get a green undertone to the gray to compliment the lighter wood tones. Paint shades shown in order of appearance:

Depending on the amount of natural light and the direction the room faces. If it is a northern facing room you might consider a tan or soft gold, if it is a southern facing room a grey or taupe, would be my suggestion. Here are some examples of colors..
