It sounds like you have a lot of sauerkraut put up for the next year. I finished ours either in late June or early July and was glad to have it done! It always feels like it is fermenting forever, but it really isn't. I just don't want to get overly busy in the summer and forget that the sauerkraut is in process.

Mine had 6 weeks to ferment this year, which was a week longer than it needed but my daughter couldn't make it the week before. But it is done now and I am glad.
