Jane - From what I understand, it requires a relatively dry rest over winter. However, it needs to still be kept warm - between 60F - 80F. That is my plan. What I am unsure about it whether or not I need to remove the tubers from the pot or just leave them in the pot.

Habenarias from monsoonal climates need to dry out during their normal winter/dry season but are best kept in the soil. The soil acts as an insulator and helps protect the tuber from complete desiccation. Out in the air they're likely to completely shrivel.
