New Japanese Maple Grower

Greetings Japanese Maple community. I am nearing retirement and I am very interested in growing Japanese Maples as a hobby and extra income. I am purchasing a bulk order of Red Japanese Maple seedlings (1 ft to 2ft Acer palmatum var. atropurpureum). I live in planting zone 8a. These seedlings will be shipped dormant in January. They recommend 1 or 2 gallon pots. What is the best type of soil mix to use? Do I plant them in pots in January or wait until later when we have no more freezing temps? If I wait can I store them dormant in the garage? Any assistance or guidance is appreciated. I am a newbie starting from scratch. Thanks.
