Planning remodel - which cooking appliance configuration?

Hi all,

i am seeking advice on which appliance configuration we should select.

We are remodeling from an L to a square layout. Currently the kitchen has an electric 32 inch cooktop and two 27 inch ovens, one a convection/micro combo.

We are replacing all three. We are active cooks and have commercial kitchen experience. I think in some ways this leaves us unimpressed by gadgets. We want solid reliability and good consistent quality in use. It is much more important to us for temperature to be consistent than for knobs to be blue.

Currently, we are considering only a gas stove, either as cooktop or range with chimney hood. (We don't want induction.)

If we go with a cooktop, we would get a double electric wall oven (staying with 27 inches but adding convection to both) and a under cabinet or countertop microwave.

if we go with a range (gas or dual), we would get one 27 inch wall oven and a built in micro/convection above it.

Our main must haves are: knobs on front, not top of surface, simmer burner, high but burner, good knobs; for oven: good oven heat retention AND preheat, low (150F) temperature capability, space for four half sheets at one time (across multiple ovens). Wants include glide shelves, infrared broiler.

We are currently stuck about 30 vs 36 inch cooking surface. One argues it's silly to go small when we drool over the larger. The other has a hard time justifying the cost difference for six inches.

We know the range option will be more expensive but gives us the option for a large cooking space if we decide it's a two turkey sized meal. Our kitchen size makes it impossible to increase to 30" wall ovens.

I seek advice on configuration and brands. I'm sure I've missed pertinent information, please feel free to ask.

I'd really think carefully about the 27" wall ovens, especially if you are replacing the cabinets. They were popular for a time but today there are very few options available and I'd have to guess in the future there will be even fewer. Ovens may only last 7 to 10 years and most people would want their cabinets to last longer. There is no way I'd put in new cabinets with 27" ovens. Has your design been posted?

    Hi Stan,

i haven't posted the design yet. It's still in draft.

And you are absolutely right. We are keeping cabinetry so that limits us to 27". I've found enough options that we are okay with that choice.

It sounds like you do a lot of cooking so I would argue for the 26" cooking surface. Factor the amount of time you spend cooking. Plus the cost difference over the life of the appliance.

Now that is from my own bias. I would rather do without than purchase something I am unhappy with. I have never uttered a statement like "I really wish I had gotten a smaller TV." During my last remodel I went with a 48" range, 6 burners + grill. Sure it was fairly expensive but I never once regretted it. On the other hand more than once I was unhappy with the previous cooktop only having 4 burners. There was more than 1 time I ran out of burners. Sure I never once used all 6 burners but it was nice to have the extra room and to know that we had the burners if they were needed.

Okay, we have tentatively decided on appliances!

We would love feedback as I haven't seen these items so discussed much. (If I'm missing threads, please don't hesitate to point them out to me.)

Range: AGA Professional Gas Range APRO36AGSS

    Oven: Miele 27" H4782BPSS

    Combo: Bosch 27" HMC87151UC

    Biggest wants/must haves:

Range: good low simmer control, glide racks, low temp capability, minimal heat loss through shell and door, decent preheat time, decent high heat burner.

    Oven: see above

Combo: reliability, simple controls, easy to clean

Any advice, experience and thoughts welcome.

    Thanks, T
