Lupins are normally used as dried beans, which means letting them dry on the vine, then pick and shell them. Be sure you follow a reliable recipe tho, as they are like many uncommon beans toxic without proper preparation. The amount of alkaloids does vary with variety, so hopefully you have a low alkaloid variety.

Final report on the Lupine beans from Italy, of course a non-toxic variety though requiring several soaks to remove whatever toxins are left- the plants were vigorous and grew over my head. They set clusters of pods but as fall wore on were failing to dry out. I tried picking some full pods and bringing them in but instead of drying they molded. So I did not succeed in getting in dried seeds out of them to treat and cook. I did try to process some green bean seeds but they did not have a good taste. I will not try to grow them again.
