hi as a school site manager i am looking at ways to reduce our waste and as the kitchen and cafeteria produce the most waste (weight wise) i was looking into vermicomposting to reduce our waste bill and produce compost for the school gardens. does anyone have advice for the size and design of system? i can make it myself, at the minute the school produces about 50/60kg (100/120 lb) a day i know that not all of this will be able to be processed until an established wormery is up and running.

    I think you may need a combination of hot and worm composting to handle that volume. You would need a considerable amount of worms and large or many containers which likely will not be able to be kept inside.

    Also most beginner worm farmers will encounter things like insects which you prob won't want inside.

    In any case, your best bet would be to try each method on a small scale then decide if you want to proceed and how to handle the volume you want.

    You may also want to research composting with the Black Soldier Fly Larva (BSFL) as they are said to be the Ultimate Composter.

    100+ lb of waste per day is a lot to handle with an on-site vermicomposting system. You'd need a lot of space, equipment, staffing, and institutional support to do it on-site.

    Very roughly, on the back of the envelope, you would need 200 lbs of worms to eat 100 lbs of waste per day*, and each lb of worms needs about one square foot of bin space (horizontally), so you would need 200 horizontal square feet of bin space. So, picture something like 6-8 inch deep boxes - if they were 2 foot square you'd need 50 of them.

    (*I realize this isn't taking into account that you're only talking about school days, but you can calculate the percentages accordingly. Also keep in mind that the worms still need to eat on the days there's no school, and in the summer. Coordinating that could get tricky.)

    You'd need some kind of bedding material to fill all the boxes and a way to process it - say, shredded cardboard or paper. You'd need to have a place to do it where flies, excess moisture etc. wouldn't be a problem. Vermicomposting operations on that scale also need to use mechanical means to separate the worms from the castings at the end of the process, so you'd probably need a trommel screen.

Anyway, it's a good overview of an institutional-scale vermicomposting system with a lot of very practical information and advice.)

    My guess is that it may work better for you to find a composting service that picks up food waste and takes it to their own facility, either for hot composting or vermicomposting (some do hot compost first for a short time and then feed the partially composted materials to worms).

    many thanks for the advice space isn't to much of a problem the school has an outdoor allotment area and space for a few 8' x 4' bins if needed. theparsley cheers for the manuals they are a lot of help as for bedding the school shreds all its office paper and old school work so there is a plentiful supply of that as well as well rotten horse manure from a local stable.

    Start medium-sized and try to run some batches to see how it handles it. You didn't say what type of school - ages - and so maybe there is an opportunity to incorporate in some of the classes.My most important suggestion: start with excess bedding (shredded paper) and increase the kitchen wastes slowly. Also you should really see if there is a potential end-user of the waste - a farm, maybe a pig farm, existing compost operation - that could use the stuff. Since you say one of your key goals is to reduce waste management cost, it's entirely possible that you could find some operation that would take it off your hands for free. If it's clean vegetable waste (no meat, dairy) it would potentially have enough value to take off your hands without haulage fees.

    You mentioned manure and local stable. There should be lots of worms in manure already and you might not need to buy them to try vermicomposting as a start.
