I eat it with frico, I dont eat bread either. But those of us who don't eat bread don't really require something to replace it.

I had never heard of frico before, but googled it and it looks interesting. Thanks very much for the post. Unfortunately my friend also doesn't eat cheese, so I'm still looking for something else to serve with the soup.

If the serving is an adequate size all she really needs is a spoon. :)

Why doesnt she eat bread? Is it the gluten? Because you can find many good gluten free breads and crackers.

She has a medical condition that doesn't allow her to properly digest bread. I don't know that gluten free would do it.

If you feel really ambitious, you could fry cauliflower florets to simulate croutons. Kale chip, fried shallots, onion strings, and fried sage work, too. Maybe even Tater Tots!

I've done oven-roasted cauliflower (chopped small-evoo, s+p, spice of your choice) and used it to garnish cream soups and it's delightful.

I love squash soup, but I think it can be a bit bland, so I like to goose it up a bit with hot sauce or spices. I love cumin with butternut squash. You might incorporate something like that into whatever you decide to make.

I think a pea salad would be good -- can you get pea shoots or pea tips where you live? How about potato wedges?
