Please don't plant anything invasive, as these can easily invade the neighboring forest and crowd out native vegetation, depriving wildlife (like birds and beneficial insects) of habitat. I'm sure there's some non-invasive that will do the trick for you.

I recall our County Agricultural Agent mentioning a hawthorn that is especially good as a boundary hedge, but cannot remember the name of it. Hawthorn has berries, though, and, being in the rose family, are susceptible to black spot.

Speaking of black spot: please don't be tempted to plant multiflora rose (wild rose). It is a non-native, invasive plant and has been found to serve as a reservoir for Rose Rosette Disease, an incurable viral disease of roses that is carried by a tiny mite that can be airborne.

If those hunters you mention are after deer, than you will want to select something deer resistant. Check the Rutgers fact sheet for deer resistant plants. The searchable list is at http://njaes.rutgers.edu/deerresistance/ , from which you can also download (free) a printable format.

Just browsing through the NJ Native Plant Society's list of native plants, I came upon Devil's Walking Stick, aralia spinosa. I've seen that one "in person" ... Now there is a plant with serious thorns!

Nothing you plant - especially if it would be starting from seeds - is going to stop people or animals from using an existing foot path or trail, that isn't located where you can come out and yell at them or shoo them away, over and over until habits change. Even shrubs of some size will be trampled, pulled or walked between when placed across an established route. If you can't install a substantial physical barrier such as a chain link fence* in that location then you really can't do anything.

Except maybe put up a permanent sign. And these may end up shot full of holes, when hunters are involved.

*Despite being a pretty serious barrier still subject to being jumped over by deer unless too tall, climbed over or cut through with wire cutters by humans, and lifted up, wriggled under or dug beneath

Maybe we're not thinking low enough ... how about poison ivy?

More practically: Posting a notice that this is private property, no trespassing, would be a good start. Of course, they could be ignored, but you've put people on notice at least. Check into local ordinances. If you want to go further, maybe consider video surveillance and file complaints against trespassers.
