Spring plant carrots 2/15-3/10 (OSU Guide, depends on where you are in the state). Fall carrots for me in Owasso is mid August. I actually started them mid September. Supposedly heat is detrimental to their taste, but I've never gotten a spring crop so I can't say. The carrots I planted August of 2015 and pulled Jan of 2016 were great. I hope I get a decent crop this year. Even planted late, they kind of sat there saying "it's too hot" until the last couple of weeks.

I grew them several years ago but couldn't remember when I planted them. Seems like they were planted late February or early March. They grew fairly well even though the weather was cool. I made a lot of carrots that year, I pickled some of them, surprisingly they taste pretty good pickled.

I think that fall carrots germinate and grow more quickly than spring carrots since the soil and air temperatures are warmer, but both spring and fall carrots taste great to me. Even when I didn't harvest them especially early, the heat didn't really seem to hurt them. I do think fall carrots might be a little sweeter since they generally grow in lower heat. If we are too cold at the proper, recommended planting time in February-March, sometimes I wait until mid-March or later to plant them, but being too cold hasn't really been an issue in recent years since the winters have been staying too warm.

I have heard they can tolerate some pretty cold weather with no harm. Sort of like parsnips.

They can. You can leave them in the ground and dig them as you choose in winter as long as your soil drains well enough that they don't rot. I've done that before. However, if you have soil-dwelling insects or rodents, like voles or gophers, the carrots may get eaten, so it likely works well for some folks and not for others, depending on what sort of hungry varmints are scouting for food in the winter time.
