Do you mean that you have the jars of canned chili base prepared and are wondering what amount of meat you add to a 16 oz. jar? Mrs. Wage's recommends combining one jar of canned chili base, one can of beans and 1/2 to 1 lb. of meat.

Thanks Dawn, I looked over their site and did not see the part about how to use the Chili Base. I skimmed it over, thinking that was just about canning the chili base.

And I Googled it , ever which way but loose :) , and came up with nothing.

We are gonna try it their way, cept sub the ground beef with brisket.

By the way, I am originally from Texas and everyone knows we Texans don't put beans in our chili, so I just substitute a pound of meat for the beans, usually giving us a total of 1.5 lbs. of meat mixed with a jar of chili base, giving us a really meaty chili. I have made it with beans because I was trying to behave myself and follow instructions, but we decided we like our chili better without beans. I bet it will taste splendid with brisket!

Chili was great. We've not done this with hamburger, so I have no comparison. But we really happy with the flavor. I got a little over a pound of meat from the point of the brisket ( the point always has a lot of fat ), but we only used 8 oz and the chili was plenty meaty. And we did use the beans, I think sans beans, we would've had to use all the brisket.

We are slicing the brisket flat, I can't bring myself to grind that up for chili meat, especially when it costs almost $4 a pound, the 12.5# brisket cost $48.

Pretty cool, still eating a product of my garden at Thanksgiving.
