TX Seed sowing question

Being that our South Texas weather is warmer than most people here, I would like to start winter sowing seeds this year. My question is, when is an appropriate time for me to do so in my region here (Houston). Our winters fluctuate from one week to the next. We don't get harsh winters and they consist of very humid winters.

I just recently this summer set up a 6x8 greenhouse that I can use when my seedlings start to sprout. I am familiar with how to WS, as I have read so much info here and I'm reading to give it a try for my new vegetable garden in the Spring.

Can someone give me an idea of when I can start to put seeds in my containers for the winter, or is it still too early for me here in my region?

I am really excited to get started, I just don't want to ruin it if the timing is not right.
