There are quite a few that appreciate a cool down to initiate spikes. The largest group a can think of is Dendrobium. Different sections have different resting periods, which also may includes a cool down, requirements. The resting periods differ in terms of length and severity. Phalaenopsis dendrobiums are the only group that I immediately can think of which don't need a cool down. Latouria sections may not need it but they can take it. So mine experience it.

Paphiopedilums like armeniacum and micranthum also need a cool down period. A few angraecum species also need one. There are many other species and related hybrids that require a cool down. Check out the habitat information of the orchid to get a glimpse into its needs.
