It depends on what variety of fig you have. Some varieties produce two crops, an early breba crop and the later main crop. Breba fruit grows on older wood, so if you prune heavily, you can miss out on this crop. The main crop is produced on new growth. However, some varieties do not produce a breba crop and in some areas, the summer isn't long enough to ripen the main crop - usually not an issue in Florida. Let us know what variety you have and someone could probably make a better recommendation.

Sounds like you grew them as trees in pots and then planted them in ground? Max figs = max branching = open vase/bush. You may have to do drastic pruning; however the goods news is you can use anything removed for cuttings. Pruning should be done while dormant.
