Fan pruning

I have a young JM that I wish to selectively prune to keep it trained and fan pruned. I know that when you have a three way junction you can cut out the middle branch to make a y junction or cut off one of the sides to make a dominent and subordanant branch. My question is: should this always be done? Is it an asthetic Japanese pruning technique fopar to leave a three way juntion?
