Countertop choice that stands the test of time for a classic kitchen?

First time I have posted a question.

We are hoping to start our kitchen remodel in a couple months. We are planning on natural or a light cherry shaker (somewhat "modified" not true shaker) cabinets. I like a classic to traditional style. I wonder if this granite pictured below looks "classic" enough. It is called Ceilo De Marfil here in Minnesota. It is more subtle than most granite, which I like. Will it go out of style? We are also considering Quartz looking marble such as London Sky, but I am not sure if it is warm enough for my taste. Thank you
