Jumbo Lemon Leaf

I have had quite the year with this lemon grown from seed. Started almost three years ago and was healthy and growing fast, larger than any others I started at the same time. This year over the winter my plants got mites and either from the mites or some other unknown, the tree lost all its leaves and half of the branches/main branch died and I had to cut it all back. It is now growing leaves again and doing great, but this week one of the new leaves sort of exploded with growth and is much bigger than the rest, and sort of has ridges. Some other new growth is coming in the same lighter color, not sure of the size they will be. Can anyone tell me what is going on? I use a citrus fertilizer every three months, growing in organic potting soil, adding worm castings with fertilizing. Mites are under control but this new growth in just one leaf has me worried as it is bigger than any lemon leaf I have ever seen...almost as big as my hand. You can see the comparison to other leaves as picture was taken up close.

any ideas? Is this something to worry about or just spring growth spurt?

Thanks!

Dani
